In fine tuning, you can create multiple sales cycles, but only mark one as the system default. You add phases to the cycle and activities for the sales team to perform in each phase. This can guide the sales team during the sales process, making the time to process opportunities shorter and more efficient.  It also helps establish a business process for the sales team.
